Craft cocktails and refined culinary dishes share the spotlight at Tom’s Town Distilling Co.’s new concept, Nighthawk Supper Club.
Starting next month, the supper club located inside the distillery’s lounge will feature a four-course dinner series paired with craft cocktails. Jenny Vergara, Feast’s Kansas City contributing editor and a local food event organizer, will co-host the series of dinners prepared by guest chefs.
Chef Celina Tio of The Belfry kicks off the inaugural event on Wed., Dec. 2. Chef Mark Dandurand of the upcoming Canary Bar + Bistro (Thu., Dec. 17) and chef Kara Anderson of Verbena (Thu., Jan. 7) are scheduled for the following two dinners.
“The idea for the Nighthawk Supper Club came as a way to provide our guests a new way to enjoy our spirits with some excellent food,” Tom's Town co-owner Steve Revare says. “We wanted to provide a unique experience while keeping everyone safe. Our supper club is an innovative way to celebrate local chefs, showcase our game-changing spirits and keep our staff working.”
The supper club’s name alludes to the Coon-Sanders Nighthawks Orchestra, which played jazz nightly in 1922 via the then-new technology of radio broadcasting. The broadcasts made Kansas City a beacon of jazz for a national audience. The Nighthawks were “a group of radio pioneers broadcasting jazz from Kansas City to the whole country,” Revare says. By naming the supper club after the orchestra, “We thought it harkened back to the time of speakeasies and free-flowing cocktails.”
Launching a new dinner series during a pandemic is a bold move, but Tom’s Town has carefully planned the experience. “The Nighthawk Supper Club offers guests an opportunity to have a unique evening out that's as safe as current guidelines allow,” Revare says. “We thought it would be a nice way to partner with some of Kansas City's independent restaurateurs as a thank you for supporting our brand, and as a way to combine our efforts to keep everyone afloat during this challenging environment.”
Seating ($125/person) is available at tables for 2, 4, 6 or 8 guests. Tables are situated with ample social distancing. The supper club will apply COVID-19 safety protocols, including the use of an air purification system. Tables of eight guests also receive a private lounge space adjacent to their table.
“Your own private lounge area will be set up next to your table with a couch, chairs, rug and coffee table,” Vergara says. “Guests can move from their lounge seating directly to their table when it comes time for dinner, and it also gives people a place to stretch their legs within their own pod.”
Tom's Town bar manager Jonathan Koenig-Riley will coordinate with participating chefs to craft unique cocktails for each dinner course that play off the flavors and themes in the dishes.
“As an industry, we need to work together to make through to the other side. Jenny Vergara has done an amazing job reaching out to Kansas City's best for the Nighthawk Supper Club,” Revare says. “Celina Tio of The Belfry is a good friend and KC legend, Kara Anderson is doing innovative work at Verbena, and we're really excited to see a preview of what chef Mark Dandurand has planned for Canary Bar + Bistro.”
Guests are encouraged to purchase tickets by the table. “This allows us to keep parties socially distant and safe,” Revare says. “If tables of a certain size are sold out, I would ask that guests call in to see if we can arrange something for their party.”
